Thai Flavoured Sweet Potato & Coconut Soup

This sweet potato soup is really quick and easy to cook.

Ingredients

  • 1 tbsp coconut oil
  • 1 onion chopped fine
  • 2 tsp Thai Curry paste
  • 750g sweet potato, peeled and grated
  • 1 ltr vegetable stock
  • 1/4 can coconut milk
  • Fresh chopped coriander to taste
  • Squeeze of lime juice

Method

Step 1 – Heat the coconut oil in a large saucepan and fry the onion until soft. Add the curry paste and cook for a couple of minutes stirring until fragrant. Add the sweet potato and stock, bring to the boil and simmer for 5 minutes or so until the potato is cooked

Step 2 – Remove from the heat and stir in the coconut milk, a squeeze of lime and add salt and pepper to taste. Leave to cool then blend with either a stick blender or in a food processer.

Step 3 – Reheat to serve and sprinkle with chopped coriander.
