Speedy Scone Base Pizza

I have an affection for a scone based pizza as it is something that my mother used to make for my children when they were small. You could use wholemeal flour if you want to add more fibre or gluten free flour for those who don’t eat gluten. The pizza sauce is generic and you can add any toppings of your chosing.

The toppings I have chosen for this pizza I cooked was boiled egg, tuna and olives in an attempt to try and eat a bit more healthy. At least I didn’t order that Dominos pizza I was craving. Other good things to put on pizza are cheese, ham, cooked chicken, peppers, mushrooms and red onion. The world is of course your oyster and you can top with sausage, salami, artichokes/sundried tomatoes from a jar or odds from your fridge. After all, the origin of a pizza was flat bread with toppings so use what you’ve got.

Ingredients for 2 pizzas (or 4 mini pizzas)

For the scone based pizza:

  • 225g self raising flour
  • 55g butter or similar
  • 140ml milk
  • If you want to add a pinch of mustard or salt n pepper feel free
  • 1 teaspoon baking powder

For the tomato sauce

  • 1 finely diced onion
  • Olive oil for cooking the onion intitally
  • Garlic – either 1 clove crushed or a teaspoon of garlic granules
  • 1 tin choppped tomatoes

Instructions

  • Put the oven on to 180c to preheat as pizza likes hot ovens. Make the scone base by putting the flour and baking powder into a bowl with the butter. Rub to a fine crumb, add the milk and knead to a dough. Roll out on a floured surface and cut around a plate as a template to make even circles. Place on an oiled baking sheet.
  • To make the tomato sauce, gently fry the onion in a pan with the olive until soft, add the tomatoes and garlic and reduce down to a spreadable sauce. Spread the sauce evenly on the scone pizza base
  • Top with toppings of your choice. Some suggestions are below. Bake in the oven for 15 – 20 minutes until the base is cooked through.

Cheese – add grated cheese – cheddar, mozerella, monteray jack

Nicoise style – add canned tuna flakes, hard boiled egg quartered, some cheese (optional) and olives along with a sprinkle of oregano

Cream cheese and artichoke – dollop cream cheese around jarred artichokes – a really yummy pizza

Roasted vegetables – roast some peppers, courgettes, onion and aubergine in a tin and add this as a topping
