This is my favourite vegetable soup and one that I always have on standby in the fridge. I tend to make batches of soup from the vegetables left over at the bottom of the fridge. You can see my You Tube video on this here: https://www.youtube.com/watch?v=81DjAL8IcLQ.
After many varients (the You Tube soup is green and swampy but tastes delicious), this is the most popular with everyone. Its simple – just chop and chuck the veg in a pot with some water and a stock cube. I’ll put some variants at the bottom of the recipe. My vegetable soup is suitable for vegetarians and vegans. This quantity should provide four portions.
Ingredients
Carrots – 2
Celery – 2 sticks
Leeks – 2
1 red pepper
Vegetable stock cube
Method
Peel the carrots and chop. Chop the celery sticks. Trim the leeks and chop into rings. Slice around the pepper and chop into chunks. Pop everything into a medium sized sauce pan and cover the veg with water. Add the stock cube and bring to the boil. Simmer for 20 minutes until the carrots are soft. Leave to cool
Once the soup is a bit cooler, blend in batches using a blender, food processor or stick blender. I only own a nutri bullet now and I pulverise it in that. Make sure you wait for it to cool or you will get a fountain of hot soup. Pour back into the pan and reheat to serve or store in the fridge to eat during the week. Season with salt and pepper before eating. You could also take this vegetable soup to work for lunch.
Varieties – for a Winter version, add half a mug of lentils and a spoonful of curry powder. A splash of tabasco will perk up a bland vegetable soup no end.
