Nut Granola

Home made nut granola is great to throw onto yoghurt for breakfast, add to salads at lunch and snack on with a drink before supper. The problem with shop bought granola is that it contains so much sugar and additional fats. Nuts are great source of natural fats and it’s a shame to adulterate such a naturally healthy food with rubbish. Nut granola is calorie dense so only eat a small handful per day. This recipe contains 8 servings of 25g each.

Ingredients for nut granola

200g mixed unsalted nuts. You can buy 200g mixed nuts in packs from Lidl/Home Bargains etc

Olive Oil – 1 tablespoon

Maple Syrup – 1 tablespoon

Vanilla Extract – 1 teaspoon

Cinnamon – 1 teaspoon

Pinch of salt

Method

Chop the nuts on a board with a heavy sharp knife. You want them to be in pieces rather than obliterated. Don’t be tempted to use a food processor like I did once. They were only good for cake mix after going in the nutri bullet. Combine the oil, syrup, vanilla extrat, cinnamon and salt in a bowl and stir well. Add the chopped nuts and stir well, ensuring all the nuts are evenly coated.

Heat the oven to 150 degrees centigrade. Line a baking tray with parchment and spread the nuts evenly on it. Set a timer for 10 minutes. Bake the nuts in the oven for 10 minutes, take them out and give them a stir. Return the nuts to the oven and bake for another 10 minutes. This is one recipe that you MUST use the timer or they will burn due to the syrup and the oils in the nuts. Please don’t be tempted to even go over by a minute – once the nuts are burnt they will be bitter, black and inedible.

Take the nuts out of the oven and leave to cool on the tray. Once they are cold, transfer into an airtight box. They should store for a couple of weeks.
