Slimming World Style Quiche Recipe

It’s so depressing getting to the age where you can’t eat what you like, you get back fat and the scales will never go back to anything resembling a BMI of 24. The decision was made by me to join Slimming World and did actually manage to lose a bit of weight. This morning I had a requirement for lunch and huge excess of eggs. We get them for free as a perk from my husband’s job so we go through a lot of eggs. Looking through my SW literature, I coudn’t find the actual slimming world quiche recipe so I had to improvise. I love quiche especially the pastry but this slimming world quiche recipe is withougt crust. Sad Face. It’s alright though as free food containing plenty of protein and some veg means you can use your syns on something more chocolatey or alcholic. This quiche recipe serves four. It’s ok cold but better eaten warm. I served it up with fat free potato wedges and, as I am due a supermarket delivey today, a bottom of the fridge salad.

Ingredients

8 eggs

Chopped onion

Spray oil to fry the onion

1 tub low fat cottage cheese

Packet of ham – say 250g any visible fat removed

Method

Preheat the oven to 180 centigrade.

Fry the onions for a few minutes in the oil. I like them crunchy as it adds more taste than onions gently cooked down to a sweet paste. Cut the ham into chunks. Crack the eggs into a bowl and whisk. Season with some pepper if you like.

Get a baking dish and add the onion, ham and cottage cheese. Pour over the eggs and stir well to combine. Place in the oven for 25 minutes or so. The quiche will rise in the middle but should be set and slighlty wobbly as opposed to bone dry. Remove from oven and serve with wedges and salad.
