Salisbury Steak with Mushroom Gravy

What is a Salisbury steak? I hear you ask. I didn’t know either until I made it the other day. It’s like a giant meatball smotherd in gravy that is passing off as a steak. Definitely more hamburger than sirloin, this recipe provides a lot of meat for your meal. I found the amount of food overwhelming but if you have a family that needs plenty of meat, this is a great dish for you. The recipe serves 4 but could stretch quite a lot further. I ended up only using half the meat for 3 people and freezing the rest for another day or a BBQ. Serve with mashed potatoes – gravy always needs mashed potatoes and some frozen vegetables from the freezer for an easy addition to the plate. If you don’t like mushrooms or can’t’eat them due to an allergy, you could cook down 600g of sliced onions which would be equally delicious.

Ingredients

  • For the Salisbury steak:
  • 500g minced beef – I use 5% fat
  • 500g minced pork
  • Teaspoon onion granules
  • Teaspoon garlic granules
  • For the mushroom gravy:
  • 600g button mushrooms finely sliced
  • Splash of oil or use a bit of stock if you prefer
  • 500ml beef stock – I use stock pots and hot water
  • Worchestershire sauce – a couple of tablespoons to taste
  • Teaspoon of french mustard
  • 2 tablespoons of cornflour and a splash of water

Method

Put the ingredients for the Salisbury steak into a bowl and combine thoroughly. Divide into 4 and shape into oval steaks. Turn the oven on to 180c and get a baking tray out. Heat a frying pan, add a spray of oil and brown the steaks on each side then put in the oven to cook through whilst you make the gravy.

Add the mushroons to a saucepan with the oil (use a bit of butter as well if you like). Cook the mushrooms down then add the beef stock. Heat through. Put the corn flour into a small bowl and add a splash of water and mix to a paste. Pour this into the mushrooms and stir thoroughly. Add a teaspoon of mustard and cook the flour out for a few minutes. The steaks should be cooked through by now so serve up with the mashed potato and vegetables.
