My family love meatballs but only the ones that I make. I’m really fussy about meatballs too and will not eat any that I haven’t made myself either. I have two recipes for home made meatballs. Here is the quick version. Using 5% fat pork makes this healthy for those of you on Slimming World, Weight Watchers or other similar diet plans. This home made meatballs recipe serves 4 people.
Ingredients
For the meatballs:
500g minced pork 5% fat
3 spring onions finely chopped
1 clove garlic crushed
1 teaspoon mixed herbs
Pinch of chilli flakes
Pinch of salt and pepper
1 egg yolk
Olive oil spray
For the sauce:
1 clove garlic crushed
1 x tin chopped tomatoes plus half a can of water
1 chicken or vegetable stock cube
Handful of greens – kale, spinach, frozen spinach etc
Method
Combine the minced pork, chopped spring onions, garlic, herbs, chilli flakes, pinch of salt and egg yolk in a bowl. Mix well. I squidge it through my fingers as you want the meatballs to be completely blended. Roll into even sized balls. Some people like larger meatballs but I like mine the sort of size that sit on a teaspoon. This is more work but you get more to go around.
Get a shallow pan or a large frying pan, place on a medium heat and spray with olive oil. Add the meatballs and fry until browned. Remove them and set aside until you have made the sauce.
Turn the heat on the pan down and add the chopped garlic with another spray of oil if it looks like its going to stick Stir it until you can smell the garlic cooking and then add the tin of chopped tomatoes, half fill the empty can with water and add to the tomatoes with a stock cube. Bring up to the boil and simmer for a couple of minutes. Add whatever green stuff you are using and cook for another couple of minutes until it’s wilted. Put the meatballs back into the sauce, cover with a lid and simmer gently whilst you put the pasta on.
Serve the meatballs on their own or with pasta and some garlic bread and a salad if you like.
