One of our family favourites, this mars bar biscuit has been around in my family since my grandma was making it. (She would have been 100 this year). Made from a very simple no bake recipe, it combines (yes you’ve guessed it!), Mars bars, digestive biscuits, margarine and golden syrup. The secret is getting the balance of the ingredients right. When I first made this recipe as a student, the amounts were easy. A small packet of digestive biscuits was the same size it had always been. Mars bars were the same standardised weight that they had always been and then you added 2 tablespoons of syrup and margarine.
Today, the weights are crazily variable. A Mars bar comes in fun size, snack size, normal- whatever that means. Then there are the double ones and also the teeny tiny ones that come in tins with other choclates. My daughter and I undertook a serious stab at getting the proportions right for this great no bake cookie and we finally have the definitive recipe here:
Ingredients
- 200g digestive biscuits (graham crackers)
- 200g Mars bars
- 2 tablespoons golden syrup
- 2 tablespoons margarine
Method
Chop the Mars bars into small even slices. I find this helps them melt more evenly and quickly. Place the biscuits in a bag and bash into small pieces. It’s entirely personal if you want to smash them into tiny crumbs or leave a couple of chunkier bits for texture. Our family is equally split of course.
Add the Mars bars, syrup and margarine to a saucepan and melt the ingredients together. If you prefer, you could melt the ingredients in a microwave – just use a microwave proof bowl and blast it for 30 seconds at a time stirring well inbetween. Once the chocolatey stuff is melted, add the digestive biscuits and mix well. Tip the mix into a suitably sized baking tin or dish and smooth with a fork. Leave to cool and then enjoy!
