For a quick and easy super tasty supper, this chicken tray bake with garlic and honey is just the ticket. Using chicken breasts, vegetables and no oil, add some flavours and stock, it’s slimming friendly and hassle free. This recipe was very successful with my family who all loved it. Serves 4 people for supper and leftovers can be eaten the next day for lunch.
Ingredients
- 4 chicken breasts
- Red pepper
- Yellow Pepper
- 4 potatoes
- Green beans – a packet of fresh or handful of frozen
- Chicken stock – make up 150ml with a stock cube
- 2 teaspoons garlic powder
- Black pepper
- 2 tablespoons of honey
Method
Grab a large roasting tin and turn the oven on to 180c. De-seed and slice the peppers and add to the roasting tin with the green beans. Peel the potatoes and cut into 8 even sized pieces so they cook together then place on the tray with the chicken breasts. To make the sauce for the chicken tray bake, mix the chicken stock, garlic, honey and black pepper well. Pour over the contents of the tray and use a big spoon or your fingers to coat everything in the tin.
Cover the tray with foil and place in the oven and bake for 45 minutes. Check the chicken is cooked by cutting a piece and push a fork into the potatoes to check they are cooked. Serve on a plate. You can have some garlic bread with this for extra garlic flavour.
