Sticky Chicken Skewers for the BBQ

I love a barbeque even in the damp British summer. If the heavens really open and you can’t face getting wet, you can pop these sticky chicken skewers under a medium grill turning them regularly as if they were on the BBQ. Don’t worry if you can’t marinate them overnight. I frequently only decide what to eat a few minutes before I cook it and these are fine with a ten minute rest – they can marinate as the barbecue heats up.

Ingredients for Sticky Chicken Skewers

500g chicken breasts

Marinade ingredients

2 tablespoons runny honey

2 cloves of garlic crushed

1 tablespoon soy sauce

1 tablespoon worcestershire sauce

1 teaspoon french mustard

If you are using wooden skewers, soak them for 20 minutes before using.

Method

Cut the chicken into even bite sized pieces.

Put the marinade ingredients into a glass bowl and mix well.  Add the chicken pieces, coat well and cover with cling film.  Marinate in the fridge for 6 hours.

When you are ready to cook, thread the chicken onto the skewers.  Cook under a medium hot grill or throw on the barbecue for 15 minutes or so turning every now and again.

Make sure the chicken is thoroughly cooked before eating.
