Why buy tomato pasta sauce from the shop when you knock up a beautifully slow cooked pomodoro sauce without any hassle in your slow cooker? Throw some basic store cupboard ingredients into the crock pot, give it six hours or so and you have a great sauce. I tend to make one meal and then freeze the remainder in to two or three containers depending on how much the sauce reduces. The pomodoro sauce is vegetarian, vegan and suitable for gluten free diets. There is no salt in my recipe but feel free to add a pinch for additional seasoning. You can also add a pinch of sugar if you want it a bit sweeter.
Ingredients
- 4 cans of whole peeled tomatoes
- 2 carrots peeled, topped and tailed
- 1 onion peeled and halved
- Garlic cloves – 8 minced or crushed
- Chilli flakes – 1 teaspoon
- Dried oregano – 1 tablespoon
- Fish sauce – optional – 1 tablespoon
Method For Slow Cooking Pomodoro Sauce
Add all ingredients to the slow cooker and cook on low for a minimum of 6 hours. Can cook for longer if required. Before serving or freezing the pomodoro sauce remove the onion and carrot. My kids eat the carrots as they are seriously infused by the sauce and lovely and soft. Break up the tomatoes if they still have any form and serve. I’ve blitzed the sauce in a food processor but it does lose all the texture so I tend to keep it as it is.
