Slimming World Sausage Stew

I bought some slimming world sausage from Iceland as they are free food and I was keen to try them. After grilling them for breakfast, I was distinctly unimpressed with the taste and texture. They were 50p each to purchase so I refused to throw them away. The weather is turning into Autumn at the moment, so I was hungry at lunch time and needed something substantial to eat. Raiding the freezer, I came across the slimming world sausages and thought I would attempt a slimming world sausage stew. In the end, I chopped up the sausages and served them as a pasta sauce. This recipe serves 2 hungry people, would stretch to 4 with the addition of another can of tomatoes/more sausage/extra vegetables.

Ingredients

Sausages – 4

Onion

Carrots x 2

Celery sticks x 2

Garlic – 2 cloves crushed

Tin of chopped tomatoes

Tin of butter beans/kidney beans, lentils would work too.

Splash of water

Oxo or other stock cube

Method for cooking slimming world sausage stew

Spray a bit of oil into a large saucepan or casserole dish. Add the onions and a splash of water and cook out for a couple of minutes. Crush the garlic and add to the pan continuing to cook with the onions. After another minute or so, add the sausages and let them start to heat. Grate the carrots and celery and add to the pot. Add the tinned tomatoes and the drained and rinsed beans with half a can of water, season with salt and pepper if you like , pop a lid on and leave to simmer gently for 20 minutes. Check occasionally to make sure it’s not catching on the bottom of the pan.

When the time is up, check that the sausages are cooked and that the sauce is of the consistency that you would like. If it’s too runny then take the lid off and reduce the sauce for a couple of minutes.

Boil some pasta, potatoes or rice to serve.
