My potato curry recipe is one that I was taught when I was a student very many years ago. It is really economical as the main ingredients are potatoes, onions and tomatoes. You can subsititue chicken for the potato – just add in place of the potato. One of my daughter is an avid “meat and potato” eater so she adores this. This recipe with 800g of potato should serve 4 as a main dish. You can serve it as part of a mixture of dishes if you like to do curry nights.
Ingredients
800g potato chopped into even sized pieces, skin on
1 onion – diced
400g tinned tomatoes
350ml vegetable stock
1 teaspoon each of cumin, coriander and garam masala
2 cloves garlic
Vegetable oil – tablespoon
Salt, pepper and lemon juice to taste
Fresh coriander, chopped
Method
Put a saucepan on a low heat. Add the oil and then the spices. Cook out very very gently for a couple of minutes then add the chopped onion. Continue to cook through gently until the onions are soft. Crush the garlic and add to the pan, cook through for a couple of minutes.
Pour in the stock then add the potatoes, followed by the chopped tomatoes and a pinch of salt. Cook through for 20 minutes or so until you can easily push a fork through the potatoes. Taste a potato and add salt, pepper and lemon juice to suit. Transfer to a serving dish or plate up. Sprinkle with chopped coriander and serve.
You can serve this potato curry as a side dish or eat it as a meal on it’s own or with rice or naan bread.
