I like a fakeaway Nandos so I marinate chicken legs in a shop bought peri-peri sauce and roast the chicken legs in the oven for 45 minutes. Always looking for the lowest fat and most healthy option, I make chips in the air fryer with very lttle fat. The Nandos style peri-peri salt are optional but I like a little bit of flavour on my air fryer chips. I am not a fan of tomato ketchup but you could use the peri-peri salt to flavour some mayonnaise if you so desire.
Ingredients
- Potatoes, as many as you fancy or will fit in the airfryer, peeled and cut into thin chips
- Tablespoon of olive oil
Ingredients fot the peri-peri salt
- 4 tablespoons salt
- 2 tablespoons paprika
- 1 tablespoon of chilli powder (more or less to taste)
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon sugar
- 1 tablespoon dried oregano
Method
- Put the potatoes in a bowl of cold water to soak away some of the starch for 30 minutes. Drain and dry with a clean tea towel or kitchen towel.
- Add the dried chips to the airfryer and pour over a tablespoon of olive oil. Fry for 10 minutes on 180 degrees, shaking occasionally. When the cycle has finished, fry for another 8 – 10 minutes at 200 degrees again shake occasionally so they don’t clump.
- 3. Combine all the peri-peri salt ingredients in a bowl and mix thoroughly ensure there are no lumps. Sprinkle on the chips once they are done.
I serve these with the roasted chicken legs and some grilled halloumi and a tomato salad.
